Week 8
This week for the muffin mission I went back to fall flavors. Like my first ever batch of muffins this semester I went spiced. This recipe called for shredded carrot, apple, walnuts and raisons combined together with a mixture of spices and my favorite cinnamon. I am not sure what made me change from the first recipe because it was so good, but I did. Flavor was there, health component was similar but perhaps in comparison to the first recipe it was on the dryer end of the muffin moisture spectrum. When I am looking for a healthy fall muffin, I will keep to the first recipe but nothing hurts in trying something new!
